My Easter Cookies

11/4 kg. flour (all purpose)
8 eggs
1 teacup butter (fresh, goat butter smells great, but one can mix some vegetable butter in, or do all olive based margarine)
3 vanilla tubes
3 teaspoons heaped ammonia
1/2 kg. sugar (brown, unrefined, is best but needs some extra work)
milk (I have done these with soy milk, they are fine).

1.Shift the flour and put in an earthenware pot. Make a little hole in the middle.
2.Put the butter in a pan, heat well, then add the flour slowly, mixing well. Let it cool for a while, then work the dough with your hands.
3.Separate the yolks from the whites.
4. Dilute ammonia into 1/2 tea cup warm milk, and add vanilla. (Alternatively you may add the zest of a lemon).
5. Mix well, preferably with your hands, to have the feel of the firmness, and form a soft dough, that should easily come off your hands, but still be sticky.
6.Make little Os and space them well, otherwise they will stick together, on a buttered tray or baking sheet.
7.Lightly cover with egg yolks, beaten well with some drops of water, and bake in a medium heat oven (start with 250o, then lower to 200).
8.They are better kept in cotton bags.
